Asado Mixed Veggies Recipe

Perfect accompaniment for Pollo Asado, these mixed vegetebles are bright and cheerful and full of flavor.

My husband and I have decided to try to adjust our lifestyle and start eating a little healthier. That doesn’t mean the food on this site will get boring (I hope!), but it does mean you’ll see a larger amount of vegetable based recipes.

This is one such recipe which I made with some pre-seasoned Pollo Asado, corn tortillas and vegetarian refried beans. I filled my plate with these veggies and was so happy. The spinach and Mushrooms is what really gives them the substance to make them more of a meal.

Asado Mixed Veggies

Ingredients

  • 2 tablespoons Olive Oil
  • 1/2 cup Yellow Onions (diced)
  • 1/2 Red Onion (diced)
  • 1 Red Bell Pepper (diced)
  • 1 Orange Bell Pepper (diced)
  • 1/2lb Mushrooms (sliced)
  • 1 1/2 Zucchini (sliced)
  • 1/3lb Baby Spinach (Washed & Dried)
  • 3 dashes Pollo Asado Seasoning

Directions

Step 1
I add the vegetables while I cut them up. So timing isn't too important here... Just start with the onions and end with the Spinach.

In a large pan, heat olive oil. Add the onions, peppers, and mushrooms. Cook for a minute and add a couple dashes of the Pollo Asado Seasoning. Cook until mushrooms are half cooked. Add the zucchini, the spinach, and another dash or two of the Pollo Asado Seasoning. Cook until the spinach is wilted.
