Chinese Chicken & Tomatoes Recipe

This Chinese Chicken & Tomatoes Recipe is similar to sweet & sour, but without the sour.

This is another one of my ‘I need to do something with all these tomatoes’ dishes.  It can easily be adapted to use with chicken breasts or other vegetables like carrots, bell peppers, zucchini… well, you get the picture.

Chinese Chicken & Tomatoes

Serves 4-6

Ingredients

  • 2 tablespoons Vegetable Oil
  • 6 Boneless Skinless Chicken Thighs
  • Salt & Pepper
  • 1/2 Large Onion (diced)
  • 2 Tomatoes (diced)
  • 1 1/2 cup Frozen Peas
  • 1/4 cup Light Soy Sauce
  • 2 tablespoons Sherry
  • 6 tablespoons Ketchup
  • 2 tablespoons Sugar
  • 2/3 cups Water
  • 1 tablespoon Cornstarch

Directions

Step 1
In medium bowl, mix together light soy sauce, sherry, ketchup, sugar, water and cornstarch. Set aside.
Step 2

In large skillet, heat 2 tablespoons vegetable oil. Salt & Pepper chicken and cook in skillet, until chicken is completely cooked. Remove from heat and dice chicken for using later.
Step 3
Cook Onions
In same skillet, heat 2 tablespoons vegetable oil. Add onions and cook until fragrant.
Step 4
Cook until bubbly
Add the diced chicken, tomatoes, peas, and sauce mixture. Cook on high for 2 minutes, or until bubbly and vegetables are cooked. Serve over rice.
