Chipotle Chickpeas Recipe

Perfect for Meatless Mondays, these Vegan Chipotle Chickpeas are great with tacos! Or, use them in place of your chicken in fried rice. Hey, it gets better, use quinoa instead of rice! Delish!

Chipotle Chickpeas

Ingredients

  • 1 can chickpeaks (drained, rinsed, skins removed)
  • 2 tablespoons avocado oil
  • 1/2 teaspoon chipotle chile powder
  • 2 teaspoons taco seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons light soy sauce

Directions

Step 1
In a frying pan, heat oil on medium high. Add the chickpeas and cook, stirring constantly, until chickpeas start to brown. Add the remaining ingredients and cook, stirring constantly, for about 2 minutes. The chickpeas will begin to get a nice dark caramel color and become very fragrant. Remove from heat and serve. Great on tacos, in burritos, or on a salad.

Chipotle Chickpeas with Quinoa

Ingredients

  • 1 cup Chipotle Chickpeas
  • 2 cups cooked quinoa
  • 1 tablespoon avocado oil

Directions

Step 1
In a saute pan, add the avocado oil, chickpeas and quinoa. Cook for about 3-4 minutes until quinoa starts to brown.
