Chocolate Cherry Cordial Bars Recipe

These Chocolate Cherry Cordial Bars were created specifically to enter in the Scharffen Berger Baking contest.  We’ll see if they become a winner as I eagerly await the results.  Let me know your thoughts on if this is an award winning bar.

Chocolate Cherry Cordial Bars

Ingredients

Layer 1

  • 1 1/2 cup Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Butter
  • 1 cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 teaspoon Cherry Bourbon
  • 1 cup Sharffen Berger 62% Semisweet Chunks
  • 1/2 cup Dried Cherries (chopped coarsly)

Layer 2

  • 1/2 cup Boiling Water
  • 1/2 cup Sharffen Berger Natural Cocoa Powder
  • 1/2 cup Flour
  • 1/8 teaspoon Salt
  • 1/2 cup Butter
  • 1 cup Sugar
  • 2 Egg Yolks
  • 1 teaspoon Vanilla
  • 1/3 cup Cherry Bourbon
  • 1/2 cup Dried Cherries (chopped coarsly)
  • 2 Egg Whites
  • 1 tablespoon Sugar

Note

Variation: In the second layer, rehydrate the dried cherries with 1/2 cup of cherry bourbon 2 hours in advance.  Drain and chop and use in place of the dried cherries in layer 2.

Can also be served warm with a scoop of ice cream on top.

Directions

Layer 1
Step 1
In Small Bowl, combine flour, baking powder and salt. Set aside.
Step 2
In mixer, cream butter and sugar together. Add eggs and beat for a minute or two until light and fluffy.
Step 3
Add vanilla and cherry bourbon. Then slowly add the flour mixture. Beat for 1 minute or until well combined.
Step 4
Stir in the chocolate chips by hand.
Step 5
First Layer
Spray a 9x13 inch glass pan with pam. Pour batter into the pan and spread evenly. Move onto the second layer.
Layer 2
Step 6
In Small Bowl, combine flour, baking powder and salt. Set aside.
Step 7
In a small bowl, combine the cocoa powder and boiling water. Mix together so that all the cocoa powder is absorbed. Set aside.
Step 8
In mixer, cream butter and sugar together. Add egg yolks and beat for a minute or two until light and fluffy.
Step 9
Add the cocoa/water mixture, vanilla and bourbon. Mix on low and scrape the bowl several times until it is combined. Add the flour and beat on medium for 1-2 minutes, scraping the sides several times to make sure it's well combined.
Step 10
In a separate mixing bowl, with the whip attachment, beat the egg whites on high until frothy. Add the 1 Tablespoon of sugar and continue beating until stiff peaks form.
Step 11
Fold the egg whites into the chocolate batter. Be sure not to mix, just fold.
Step 12
Second Layer
Pour over the chocolate chip mixture and spread evenly.
Bake it
Step 13
Cooked
Bake at 350 for about 30 minutes, or until batter is cooked. The top may be cracked, that's ok.
Step 14
Remove from oven and cool. Cut up into squares and serve.
