Low Carb Pizza Recipe

It’s hard to stay low carb and watch your friends and family eat pizza. Now, you can make your own and be a happy camper eating your low carb pizza that you made yourself. The best part? It’s quick and easy and can be made any night of the week.

I’ve been trying hard to stay low carb. I stray occasionally, but in general, I stay away from breads, rice, pasta and try to stick to healthy alternatives. Mostly, I eat a lot of veggies. But Pizza? Honestly the cauliflower and zucchini crust pizzas just don’t sound appetizing. I haven’t tried them, so maybe I should give them a chance. I just haven’t wanted to yet.

So, I used one of my older recipes and modified it to make this delicious and easy pizza. Just buy some sauce, or make your own. It doesn’t matter. The hardest part of the pizza on a low carb diet, is the dough itself.  This dough is not exactly like a pizza dough, but you will be full with two slices and be satisfied and happy. Like I said, a happy little camper.

Low Carb Pizza

Ingredients

  • 1 1/2 cup plain yogurt (full fat)
  • 2 tablespoons garlic olive oil
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon italian seasoning
  • 2 cups Bob's Red Mill Low Carb Baking Mix
  • Pizza Sauce
  • Mozzarella Cheese
  • Any toppings you like

Directions

Step 1
Preheat oven to 400 degrees.
Step 2
Combine yogurt, garlic olive oil, Italian seasoning, and garlic salt. Mix until combined. Add the flour in batches and stir in, adding only if dough is too wet (it will be a little sticky) and doesn't form a ball. Depending on the type of yogurt you use, you may need to add more or less of the low carb baking flour. Set aside and let rest for about 5-10 minutes while you chop up your veggies and toppings.
Step 3
Spray a cookie sheet with oil. Spread the dough, using your hands, onto the cookie sheet, and flatten to about 1/4 inch. Bake for 10 minutes in the 400 degree oven.
Step 4
Remove from oven and spread pizza sauce onto dough. Sprinkle on cheese, add your toppings, add more cheese. Bake at 400 degrees for 12-15 minutes, or until cheese is bubbly and starts to brown on the edges.
Step 5
Remove from oven and let rest for 5 minutes before cutting into slices.
