Ingredients
- 1/4 cup Garlic Olive Oil
- 8 cloves Garlic (peeled)
- Juice of 1 lemon
- 1 tablespoon Fresh Thyme Leaves
- 1/4 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1 Pork Roast

In a blender or food processor, blend the olive oil, garlic, lemon juice, thyme leaves, salt and pepper. Rub this blend onto the pork and roast in a preheated 425 degree oven for 15 minutes. Reduce heat to 325 degrees and cook uncovered for about 1 hour until the center reads 145 degrees. Remove from oven and let rest 10 minutes before slicing. |
