Ingredients
- 4 Chicken Breasts (skinless & boneless)
- 1/4 cup Garlic Olive Oil
- 2 teaspoons Chicken Rub (*See notes for recipe)
- 3 tablespoons Butter
- 1/3 cup Apricot Pineapple Jam (or other jam)
- 1 tablespoon Light Soy Sauce
- 1 tablespoon Cilantro Paste
- 2 tablespoons Balsamic Vinegar

Preheat oven to 425 degrees. Pat dry the chicken breasts. Rub on the garlic olive oil and chicken rub. Place in a baking dish with Pam cooking spray. Bake uncovered at 425 degrees for 10 minutes. After 10 minutes, reduce the heat to 325 degrees and bake for another 20-40 minutes until the temperature reaches 165 degrees. Cooking time depends on the size of the chicken breasts. While the chicken is cooking, combine in a saute pan the remaining ingredients (butter, jam, soy sauce, cilantro paste and balsamic vinegar). Bring to a boil, reduce heat to low and simmer for 5 minutes. Remove from heat and set aside until the chicken is done. When the chicken reaches 165 degrees, remove from the oven and toss the chicken in the glaze and serve. |
