When you are either experimenting with Paleo, going Gluten-Free, or just trying to try something lower in carbs, one of the most difficult things is the simplest recipes. This Paleo Fried Squash Recipe is my adaptation from my Mom’s traditional Fried Squash Recipe.
I don’t think I can live a Paleo diet. Mostly because it is near impossible to give up soy sauce AND cornstarch. Those two ingredients are mainstays for Chinese cooking. And although I enjoy trying new adaptations to old classics, or just creating something new, at some point I just need to cook dinner. So, full-fledge Paleo is out for me. However, lowering my carbs and reducing my flour intake is something that I’m going to continue.
This is one of those such recipes that I made and it was a huge hit. My son ate a full plate of them, had the left overs the next day and is still asking me why we don’t have more. I guess I have to make some more soon.
