Quick Chicken Cacciatore Recipe

One night I was throwing dinner together and surprise, surprise! it tasted just like Chicken Cacciatore. And, it only took 30 minutes from start to finish. Quick Chicken Cacciatore Recipe is a great weeknight dinner.

One night I was throwing dinner together and surprise, surprise! it tasted just like Chicken Cacciatore. And, it only took 30 minutes from start to finish. It's a great weeknight dinner.

Ingredients

  • 2lb Chicken Thighs
  • 2 tablespoons Garlic (minced)
  • 1 tablespoon Italian Herb Seasoning
  • 2 teaspoons Garlic Salt
  • 1 teaspoon Ground Black Pepper
  • 4 tablespoons Olive Oil (divided)
  • 1 Yellow Onion (diced)
  • 1 cup Dry Vermouth
  • 1 can Seasoned Diced Tomatoes with basil and garlic
  • 1 can Italian Style Stewed Tomatoes (cut into quarters)
  • 1 can Contadina Italian Herb Tomato Paste (4 oz)

Directions

Step 1
Combine chicken, garlic, garlic salt, pepper, italian seasoning and 2 tablespoons of olive oil in bowl and set aside.
Step 2
In large chicken fryer, heat pan and add 2 tablespoons of olive oil and onions. Cook onions until they are translucent.
Step 3
Add chicken to pan and continue to cook on high to brown the chicken (chicken need not be fully cooked).
Step 4
Add wine and boil for about 2 – 3 minutes allowing the chicken to absorb the wine and the alcohol to burn off.
Step 5
Add the remaining ingredients and bring to a boil. Reduce heat and simmer while you cook the pasta (about 10-15 minutes).
Step 6
Serve over pasta with parmesan cheese.


If you are like me, you rush, rush, rush in the morning to get breakfast cooked, lunches prepared, kids off to school, rush to work… that by the time you get home from work, exhaustion has set in. Sound familiar?

Rachel Ray had a true market with her 30 minute meals. For us working families, we don’t have all day to spend preparing for our weeknight meals. We need something quick and easy, but still healthy and fresh. A lot of my recipes fit into this category. And this recipe was born from me just trying to throw something together because I was too tired to do anything else. And it was easy. And it tasted really, really good.

Note: this is pictured with Edamame noodles that I purchased at Costco. It’s a great alternative to standard wheat pasta and gives you ton of protein and fiber.
