Looking for a gluten-free or low carb pasta option? Try Zucchini as your noodles, a.k.a. Zoodles! This Garlic Shrimp Zoodles Recipe is so good, there is no need for that high-carb pasta.
Garlic Shrimp Zoodles

Ingredients
- 2 tablespoons garlic olive oil
- 2 tablespoons butter
- 1 1/2 tablespoon minced garlic
- 4oz mushrooms (sliced)
- 1lb shrimp (peeled & deveined)
- 1/4 cup green onions (chopped)
- 1/4 cup dry vermouth
- 4-6 cups zucchini (spiralized, uncooked)
- 1/2 cup parmesan cheese (shredded)
- sea salt & pepper
Note
You can make this with spaghetti or other long noodles as well. Use 1/2 pound of cooked spaghetti noodles and reduce the zucchini in half. Add the zucchini first for a minute to cook/flavor the zucchini. Then add the noodles and cook for a couple minutes until spaghetti noodles are hot.

In a large pan, heat on medium add the butter and olive oil, and heat until butter is melted. Once the butter is melted, add the minced garlic and the mushrooms. Cook for about 1 minute to start flavoring the butter/oil mixture and to start cooking the mushrooms. | |

Add the shrimp and 4-6 grinds of sea salt. Cook for a couple minutes until the shrimp starts to get pink. | |

Add the dry vermouth and the green onions. Cook for about a minute, letting the vermouth to start to cook down and flavor the mushrooms and shrimp. | |

Add the zucchini zoodles and toss, cooking on medium high, mixing together. Add the parmesan cheese and cook for another two minutes, tossing constantly. Remove from heat and serve. |
As I continue to try to live a healthy lifestyle, I have found that pasta is my nemesis. I cannot eat pasta without gaining weight. Period. None. Nada. So, I’ve been experimenting with different options.
One of my favorites is to spiralize my zucchini and use it as I would spaghetti. Another way is to stir fry the zucchini with peppers and onions and pour spaghetti sauce over it. I also like using Edamame Noodles. Or, steamed broccoli. All these options are great ways to still eat foods you love without the carbs and calories.
