This is one of my moms favorite one dish meals. Full of flavor, Mexican Chicken & Rice is perfect for that weeknight when you want a hands-off meal.
Mexican Chicken & Rice
Ingredients
- 3lb Chicken (whole, cut up or 1.5 lbs boneless (as shown))
- 1/4 cup Flour
- 1.5 teaspoons Salt
- 2.5 teaspoons Chili Powder
- 1/3 cup Olive Oil
- 1/4 cup Onion (chopped)
- 1 clove Garlic (minced)
- 1 Jalapeño Chile Pepper (seeded and diced small)
- 1 tablespoon Fresh Cilantro (chopped)
- 3/4 cups Green Peppers (chopped)
- 1 1/2 cup Tomato Sauce
- 1 cup Water
- 3/4 cups Rice (uncooked)
Directions
Step 1 | |
Place flour, salt and chili powder in a zip lock bag or bowl and combine. Shake the chicken in the flour mixture to coat. | |

In a large pan, heat oil on medium (since this is olive oil, you do not want the oil to get too hot, you can use vegetable oil or other oil for a higher heat if preferred). Brown the chicken in the oil. | |
Step 3 | |
Add all the remaining ingredients. Cover and simmer gently for 40 minutes or until the chicken is tender. |
Let me be honest, this is not a Mexican recipe. The title is because it uses Mexican flavors like the jalapeños. It is really full of flavor without being too spicy. Want more heat? Add more jalapeños.
The original recipe had a whole cut up chicken, but I didn’t have that on hand. So pictured is boneless skinless thighs.
