If you’re looking for a healthy dessert that still tastes good, this is your cookie recipe. These cookies tastes like a tiny dutch apple pie and is the softest, fluffiest, gluten free cookie you will ever have.
Preheat oven to 350 degrees.
In a bowl combine dry ingredients: old fashioned oats, oat flour, baking powder, cinnamon, nutmeg and salt. Set aside.
In a large bowl, combine the melted butter, vanilla, honey and unsweetened apple sauce. Mix well. Add the egg and whisk together until egg is fully incorporated. Add the dry ingredient mixture to the wet ingredients and mix with a wooden spoon. Set aside.
Core, peel and finely dice your apples while your cookie batter sets. I used 1 1/2 granny smith apples for my batch and it was perfect. It was about 1 cup of small diced apples. Once the apples are diced, add to the cookie batter and combine.
Drop onto cookie sheet (non-stick sheet or with parchment paper). You can choose to flatten the cookies by pressing down with the back of a spoon. The cookies will remain in the shape you place them in and will not spread. Bake at 350 degrees for 12-14 minutes. Remove from oven and let cool for a few minutes. You can serve warm or allow to fully cool. Refrigerate leftovers.
I’m always looking for a healthy snack to curb my sugar cravings. Fruit is always the choice snack, but sometimes I want something a bit more. I have made several ‘banana’ style cookies that are sugar free, but I was starting to tire from them. So, in my mind, I kept thinking, “What else can I use?”. Apple sauce is something I see a lot of in ‘low fat’ cooking as a substitute for eggs and/or butter (never tried that myself). So I started with that thought.
If you’re going to have apple sauce as your base, then an apple pie cookie makes the most sense. The first batch I tried was 100% no added sugar and boy was it bland! It was a little salty too. So, I made a few adjustments and Wow! I am super pleased with this recipe. It was very easy to make, and the cookies are just plane scrumptious.
