Ingredients
- 3 tablespoons Vegetable Oil (Divided by 1 Tbl + 2 Tbl)
- 2-3 cups Broccoli Florets
- 2 dashes Salt
- 1/4 cup Water
- 1lb Sliced Velveted Chicken Breast (* See Notes to Velvet Chicken)
- 1/2 cup Light Soy Sauce
- 1 heaped tablespoon Chili Garlic Sauce
- 1 tablespoon Sugar
- 1/4 cup Oyster Sauce
- 1 tablespoon Cornstarch
- 1/2 cup Green Onion (chopped)

How to Velvet Chicken
Directions
Step 1

In small bowl, mix together the Lo Mein sauce, chili garlic sauce, sugar and cornstarch and set aside. |
Step 2

In large wok or pan with lid, heat 1 tablespoon of oil on high. Add the broccoli and toss cooking on high for about 1 minute. Be sure to keep it moving to prevent the broccoli from burning. Add the 1/4 cup of water, toss, cover and cook for 1 minute or until broccoli is bright green. Remove from pan and set aside.
Alternatively, you can optionally choose to steam or par-boil your broccoli. |
Step 3

Wipe pan out with a paper towel to remove excess moisture. Add the remaining 2 tablespoons of oil and heat on high. Add in the velvet chicken and cook on high until the chicken is fully cooked (about 2-3 minutes). |
Step 4

Add to the chicken the sauce and broccoli. Toss to coat and cook on high until bubbly (this is about 1-2 minutes). Remove from heat and serve over white rice. |
