Grandma’s Coleslaw Recipe

My father’s mother makes the best coleslaw.  This is NOT KFC sweet style coleslaw.  This is much more like a vinaigrette style slaw than a sticky sweet slaw.  Perfect with Pulled Pork, Crab, Hamburgers, Hot dogs… ok, you get the idea.  Delish!

Cole Slaw

Ingredients

  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 1/2 Green Bell Pepper (diced or sliced thin)
  • 1 1/2 cup Mayonnaise
  • 1 cup Vinegar
  • 1 tablespoon Sugar
  • 1 Onion (diced or sliced thin)
  • 1 Head of Cabbage (Shredded)
  • 1 Carrots (Shredded)

Note

Original Recipe: Grandma's original recipe called for 1 cup vinegar to 1 cup of mayonnaise. That was too strong in vinegar, so I adjusted it.

Notes:
Do not use Miracle Whip (too sweet) or any of the light mayonnaises (too watery). This is a "dump" recipe so you may have to adjust some of the ingredients, depending on the size of the head of cabbage.

Directions

Step 1
Mix together
Mix the vinegar, mayonnaise, sugar, salt and pepper in a large mixing bowl.
Step 2
Add Vegetables & toss
Add all of the remaining ingredients and thoroughly toss until all of the vegetables are evenly coated.
Step 3
Refrigerate for at least two hours and toss before serving.
