Harvest Potatoes Recipe

This is a colorful and flavorful potato side dish inspired by Spanish Rice.  Yep, I said, it, inspired by Spanish Rice. The tomato flavor is subtle, but is a great compliment to the potatoes.

Harvest Roasted Potatoes

Ingredients

  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter
  • 4 Green Onions (chopped)
  • 2 1/2lb Mixed baby potatoes (quartered)
  • 1 tablespoon Knorr Tomato Bouillon with Chicken (Caldo de Tomato Pollo)
  • 1/4 teaspoon Garlic Pepper
  • 1/4 teaspoon Garlic Salt

Directions

Step 1
Heat oil and butter in a large pan with a lid. Add the remaining ingredients and cook on high until they start to brown. You don't want to burn the potatoes. Instead, you just want them to have a little bit of color. Reduce heat to low, cover and simmer for 15 minutes or until the potatoes are fully cooked. Uncover and serve.
