This was created one night when I had leftover rice but didn’t want to make Chinese fried rice since I was having an italian style chicken: Easy Baked Parmesan Crusted Chicken Tenders. This was the perfect side dish accompanied by Pesto Spinach.

Ingredients
- 1 tablespoon Garlic Olive Oil
- 2 cups Cooked Rice
- 2 tablespoons Marinara Sauce
- 1 teaspoon Prepared Pesto Sauce

In large skillet, heat garlic olive oil. Add rice, breaking it up with a meat masher if needed. Add the marinara sauce and pesto sauce. Cook, stirring frequently, until rice is coated evenly and hot. Serve hot. |
