Ingredients
- 5lb Medley Baby Potatoes (quartered)
- 5 tablespoons Olive Oil
- 1 teaspoon Kosher Salt
- 3 cups Mayonnaise
- 2 tablespoons Stone Ground Mustard
- 1/4 cup Vinegar
- 1/4 teaspoon Salt
- 1/4 teaspoon Pepper
- 2 teaspoons Sugar
- 1 1/2 cup Green Onions (chopped)
- 1 1/2 cup Mixed Bell Peppers (diced)
- 1 cup Celery (diced)
- 6 Slices Bacon (cooked crisp, cooled and cut up)
Directions

Coat quartered potatoes with olive oil and kosher salt. Roast at 425 degrees for 30 minutes, or until golden brown. Remove from oven and cool completely. | |

Combine all remaining ingredients. Refrigerate for at least 2 hours before serving. |
