Roasted Potato & Bacon Salad

  • 5lb Medley Baby Potatoes (quartered)
  • 5 tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • 3 cups Mayonnaise
  • 2 tablespoons Stone Ground Mustard
  • 1/4 cup Vinegar
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 teaspoons Sugar
  • 1 1/2 cup Green Onions (chopped)
  • 1 1/2 cup Mixed Bell Peppers (diced)
  • 1 cup Celery (diced)
  • 6 Slices Bacon (cooked crisp, cooled and cut up)


Step 1
Coat quartered potatoes with olive oil and kosher salt. Roast at 425 degrees for 30 minutes, or until golden brown. Remove from oven and cool completely.
Step 2
Combine all remaining ingredients. Refrigerate for at least 2 hours before serving.
