I had a craving for my mom’s ‘Eggs for Brunch’ recipe which was created for a large crowd and meant to bake while you were at church so you could come home and serve a delicious brunch for special mornings like Christmas and Easter. I craved it one day and decided to make something similar on the stovetop and this was the result. Super yummy.

I had a craving for my mom's 'Eggs for Brunch' recipe which was created for a large crowd and meant to bake while you were at church so you could come home and serve a delicious brunch for special mornings like Christmas and Easter. I craved it one day and decided to make something similar on the stovetop and this was the result. Super yummy.
Ingredients
- 2 tablespoons Butter
- 1/2 Onion (diced)
- 1/4 Pepper (orange, red or yellow)
- 1 cup Ham (diced)
- 1/4 Tomato (diced)
- 2 Slices White Bread (with crust)
- 4 Eggs
- 1/4 cup Cream (can substitute milk)
- 1/8 teaspoon Salt
- 1/8 teaspoon Pepper
- 1/2 cup Sharp Cheddar Cheese (shredded)

In large skillet, sauté butter with onions and peppers for a few minutes on high or medium-high. Add the ham and tomato, and cook for another minute. Then add the bread, breaking it up as you put it into the skillet and toss with the onion mixture. Let it cook on medium heat for a minute or two to brown while you work on the next step. | |

Whisk together the eggs, milk, salt & pepper. Pour over the onion mixture and add the cheese. Mix quickly and reduce heat to a simmer. Cover and let it cook for about 10 minutes. Serve hot as is, no need for toast! |
