Apricot Coconut Bars (Gluten Free & Vegan) Recipe

Vegan, Gluten-Free, raw, clean, healthy… Delicious! These bars are only 4 ingredients, no baking required, and are a perfect high energy snack for when you are on the go.


Apricot Coconut Bars (Gluten Free & Vegan)

Ingredients

  • 2 cups pecans (approx. 1 bag)
  • 1 cup dried dates (packed lightly)
  • 1 cup dried apricots (packed lightly)
  • 1 cup sweetened shredded coconut

Directions

Step 1
In a food processor, process all ingredients for about 5 minutes, or until they are broken down and the mixture is crumbly and all ingredients are uniformly chopped. Line a 9x9 pan with parchment paper. Press mixture firmly into pan. Refrigerate for 1 hour. Cut and serve. Leftovers can be stored in the refrigerator or on the counter.


I’ve been having fun with these no back bars and balls. This was definitely a winner, and quite a bit different than the majority of the ones I’ve seen on Pinterest and Facebook. Most of the fruit/nut bars are chocolate flavored, which is great. But sometimes I just want something light and not chocolate (GASP!).

These bars can also be balled instead of made into bars. Either way you make them, they are perfect for your next hike.
