In a saucepan, bring the almond milk, coconut sugar, and caramel sauce just to a boil. Remove from heat and stir in the vanilla and chia seeds. Let set for 3 minutes. Stir well, making sure to distribute the chia seeds evenly. Let set for 10 minutes. Stir and serve warm. Refrigerate leftovers. Top with Caramel sauce, if desired.
