This is a great leftover recipe to use with your Carne Asada. One of my favorite leftover eggs recipes.

Carne Asada & Eggs
Ingredients
- 1.5 tablespoons Butter
- 1/4 cup Mixed Bell Peppers - yellow, red, orange, and green (diced)
- 2 Green Onions (chopped)
- 1/2-1 cup Leftover Cooked Carne Asada
- 4 Eggs
- 1/4 cup Milk
- 3 dashes Salt
- 3 dashes Pepper
- Shredded cheese (optional - to taste)

In a medium bowl, beat eggs with milk, salt and pepper. Set aside. | |

In a large skillet, heat butter and cook onions and peppers until soft. Add the carne asada and cook until hot. Add the eggs, and cook, pulling the eggs from the side and over to get fully cooked. Once cooked, remove from the pan and serve with salsa, avocados, and tortillas. |
