Chipotle Onion Dip Recipe

A spicy fresh onion dip that is to die for.  You will love the smokey chipotle flavors mixed with the caramelized onions and ranch.  So yummy.

This recipe was created by Dish Ditty to enter into the TABASCO® Brand Pepper Sauce and a Hidden Valley® Original Ranch® Dip Mix contest.

The key to caramelizing the onions is to heat on high and to let the onions get almost burned.  Adding the water will release the sugars and create a sweet caramelized onion base.

Chipotle Onion Dip

This is a spicy fresh onion dip with smoky chipotle flavors, caramelized onions, and ranch.

Ingredients

  • 1 tablespoon Olive Oil
  • 2 1/2 cups Onions (diced)
  • 1/2 cup Water (divided)
  • 1 cup Green Onions (chopped)
  • 2 cups Sour Cream
  • 1 cup Mayonnaise
  • 1 Package Hidden Valley Ranch Dip
  • 2 tablespoons Tabasco Chipotle Pepper Sauce

Directions

Step 1
Heat pan with olive oil
Heat medium frying pan with oil on high until hot.
Step 2
Let onions get browned
Add diced yellow onions and spread out in the pan. Leave in the pan for 3 minutes without moving them. Don't worry, they will get a little dark, that's what you want. After 3 minutes, stir and cook for another minute letting the onions get mostly browned.
Step 3
Add Water
Add 1/4 cup of water to the onions and cook until water is absorbed.
Step 4
Add remaining water
Add remaining 1/4 cup of water and cook until the water is absorbed.
Step 5
Add green onions and cool
Remove from heat and stir in green onions. The onions will start to wilt. Let cool on stove for about 15 minutes.
Step 6
Mix together
In a large bowl, mix the sour cream, mayonnaise, Hidden Valley Ranch Dip, and Tabasco Chipotle Pepper Sauce. Use 2 Tablespoons of the Tabasco Chipotle Pepper sauce if you don't want it too spicy, or up to 4 Tablespoons if you like it spicy.
Step 7
Add onion mixture
Add the onion mixture to the sour cream mixture and combine well.
Step 8
Serve with chips or veggies
Refrigerate for at least 1 hour before serving. This dip can be made a day in advance and is great with chips or vegetables.
