Coconut Chia Seed Pudding

Ingredients
- 2 cups coconut milk (or other milk)
- 3 tablespoons honey
- 1 tablespoon vanilla
- 1/2 cup chia seeds
- 1/4 cup sweetened flaked coconut
Directions
Step 1 | |
Mix the coconut milk and honey together, making sure the honey is completely dissolved. Then stir in the vanilla and chia seeds, making sure the chia seeds are all mixed in. Let the mixture stand for 10 minutes. Then, using a whisk, stir the mixture again to make sure all the chia seeds are un-clumped. Yep, un-clumped. They get settled to the bottom, so take a few minutes with a whisk and try to get a smooth mixture. Then stir in the coconut and make sure it is evenly distributed. Refrigerate for 6 hours. |
My Chia Seed Pudding quest is in full swing, and this is probably my second favorite so far (the first being the Cookies & Cream Chia Seed Pudding Recipe).
If you haven’t tried Chia Seed Puddings, this is a great one to start with. The only added sugar comes from the coconut. For a version that has no refined sugar, you can get the unsweetened coconut and just add a little more honey.
Enjoy!
