When exploring Chia Seed Puddings, this Coconut Chia Seed Pudding Recipe needs to be on your repertoire. It’s Gluten-Free, Vegan, low in sugar, and only a few ingredients.
Mix the coconut milk and honey together, making sure the honey is completely dissolved. Then stir in the vanilla and chia seeds, making sure the chia seeds are all mixed in. Let the mixture stand for 10 minutes. Then, using a whisk, stir the mixture again to make sure all the chia seeds are un-clumped. Yep, un-clumped. They get settled to the bottom, so take a few minutes with a whisk and try to get a smooth mixture. Then stir in the coconut and make sure it is evenly distributed. Refrigerate for 6 hours.
