This recipe comes from one of my coworkers who was born and raised in Hawaii. The Macadamia nuts in this candy just brings Rocky Road to a new level. Simply fantastic!
Hawaiian Rocky Road Candy

Ingredients
- 1lb bittersweet chocolate
- 2lb dark chocolate
- 1lb milk chocolate
- 32oz mini marshmallows
- 24oz macadamia nuts
Directions

Melt chocolate. Be sure not to cook the chocolate as that will cause it to become grainy and will affect the flavor. The easiest way to ensure the chocolate isn't burned is to use a double boiler. | |

Using one full size aluminum pan, add the marshmallows and macadamia nuts, pouring the melted chocolate over the nuts and marshmallows. Refrigerate for several hours. Use a cleaver to cut up chocolate and serve. Refrigerate leftovers (is there such a thing?) |
Thanks to my coworker for sharing this recipe with me. Every year he makes 3 batches of this and brings it to work to share. I missed out this year as I was taking my father to one of his doctors appointments, and my coworker was nice enough to bring me some to work the following day. To say I was happy was an understatement. Now, I will have to figure out how to work off these extra calories!
I haven’t made this myself, and I may not because I don’t really need any more sugar in my life. I will just enjoy it every Christmas.
