This is another soup recipe. It is inspired by a delicious soup we had in Maui at Java Jazz restaurant. This is a cross between a chicken noodle soup and a chicken stew. This Hearty Chicken Soup Recipe is going to become one of our regular dinner soups that we add to our winter soup rotation.
Sauté the onions and peppers in the ghee until soften. Add the celery and carrots and herbs. Sauté for another 3 minutes. Add the chicken stock, garlic, vermouth and better than bouillon seasoning (if the chicken stock is full salt, reduce the better than bouillon by half). Bring to a boil and add the potatoes and lentils. Reduce heat to a simmer, cover and cook for 20 minutes.
After 20 minutes, add the zucchini, stir and cook for another 5 minutes, or until zucchini is softened. Increase heat to a medium temperature and add the noodles and cooked chicken. Cook until noodles are softened.
Remove from heat and add the spinach and cracked pepper. Stir well. Cover and let set for 5-10 minutes. Serve hot.
Yep, I’ve been into making lots of soups this winter. Probably more than usual due to the insane weather we have been having here in California. Over 29 atmospheric rivers between October 2022 and March 2023. Insanity!
So yes, soups are still something that makes me happy so here ya go. I’m into flavorful hearty soups, and this one is just that. I also would consider it a ‘kitchen sink’ soup, since I put in everything but the kitchen sink. Or even a “empty the vegetable bin” soup since that’s why I chose those veggies.
However you want to categorize it, this soup made me happy and hopefully will make you happy too. Enjoy!
