This recipe was created from the soup made after our Thanksgiving Leek Roasted Turkey. You can use any leftover turkey or chicken for this soup. Variations are endless.

Ingredients
- 1/2 Turkey carcass (with leeks/veggies if available)
- 2-4 Carrots (whole)
- 2 Celery (whole)
- 1 Onion (cut in half)
- 12 Peppercorns
- 1/2 Leek (whole)
- 1 cup White Wine
- 2 teaspoons Kosher Salt
- 1/2 bunch Fresh Parsley
- Extra Turkey meat (as desired)
- 10+ cups Water
- 3-4 Bay Leaves
- Any roasted Vegetables from Leftover Turkey

Place everything in a large stock pot. Bring to a boil. Reduce heat and simmer covered for 1.5 hours. | |

You can serve it as is, or strain it and chop up the vegetables and turkey meat. |
