Leftover Turkey Leek Soup Recipe

This recipe was created from the soup made after our Thanksgiving Leek Roasted Turkey.  You can use any leftover turkey or chicken for this soup.  Variations are endless.

Leftover Turkey Leek Soup

Ingredients

  • 1/2 Turkey carcass (with leeks/veggies if available)
  • 2-4 Carrots (whole)
  • 2 Celery (whole)
  • 1 Onion (cut in half)
  • 12 Peppercorns
  • 1/2 Leek (whole)
  • 1 cup White Wine
  • 2 teaspoons Kosher Salt
  • 1/2 bunch Fresh Parsley
  • Extra Turkey meat (as desired)
  • 10+ cups Water
  • 3-4 Bay Leaves
  • Any roasted Vegetables from Leftover Turkey

Note

As shown, served with Cherri's Lazy Noodles.

Directions

Step 1
Place everything in a large stock pot. Bring to a boil. Reduce heat and simmer covered for 1.5 hours.
Step 2
You can serve it as is, or strain it and chop up the vegetables and turkey meat.
