Chocolate Cherry Cordial Bars Recipe
These Chocolate Cherry Cordial Bars were created specifically to enter in the Scharffen Berger Baking contest. We’ll see if they become a winner as I eagerly await the results. Let me know your thoughts on if this is an award winning bar.

Ingredients
Layer 1
- 1 1/2 cup Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Butter
- 1 cup Sugar
- 2 Eggs
- 1 teaspoon Vanilla
- 1 teaspoon Cherry Bourbon
- 1 cup Sharffen Berger 62% Semisweet Chunks
- 1/2 cup Dried Cherries (chopped coarsly)
Layer 2
- 1/2 cup Boiling Water
- 1/2 cup Sharffen Berger Natural Cocoa Powder
- 1/2 cup Flour
- 1/8 teaspoon Salt
- 1/2 cup Butter
- 1 cup Sugar
- 2 Egg Yolks
- 1 teaspoon Vanilla
- 1/3 cup Cherry Bourbon
- 1/2 cup Dried Cherries (chopped coarsly)
- 2 Egg Whites
- 1 tablespoon Sugar
Note
Variation: In the second layer, rehydrate the dried cherries with 1/2 cup of cherry bourbon 2 hours in advance. Drain and chop and use in place of the dried cherries in layer 2.
Can also be served warm with a scoop of ice cream on top.
Directions
Layer 1

Step 1

In Small Bowl, combine flour, baking powder and salt. Set aside. |
Step 2

In mixer, cream butter and sugar together. Add eggs and beat for a minute or two until light and fluffy. |
Step 3

Add vanilla and cherry bourbon. Then slowly add the flour mixture. Beat for 1 minute or until well combined. |
Step 4

Stir in the chocolate chips by hand. |
Step 5

 Spray a 9x13 inch glass pan with pam. Pour batter into the pan and spread evenly. Move onto the second layer. |
Layer 2

Step 6

In Small Bowl, combine flour, baking powder and salt. Set aside. |
Step 7

In a small bowl, combine the cocoa powder and boiling water. Mix together so that all the cocoa powder is absorbed. Set aside. |
Step 8

In mixer, cream butter and sugar together. Add egg yolks and beat for a minute or two until light and fluffy. |
Step 9

Add the cocoa/water mixture, vanilla and bourbon. Mix on low and scrape the bowl several times until it is combined. Add the flour and beat on medium for 1-2 minutes, scraping the sides several times to make sure it's well combined. |
Step 10

In a separate mixing bowl, with the whip attachment, beat the egg whites on high until frothy. Add the 1 Tablespoon of sugar and continue beating until stiff peaks form. |
Step 11
|
Fold the egg whites into the chocolate batter. Be sure not to mix, just fold. |
Step 12

 Pour over the chocolate chip mixture and spread evenly. |
Bake it
|
Step 13
|
 Bake at 350 for about 30 minutes, or until batter is cooked. The top may be cracked, that's ok. |
Step 14
|
Remove from oven and cool. Cut up into squares and serve. |
