Mango Chicken Recipe

Mango Chicken puts Sweet & Sour Pork to shame.  Light, bright, and happy, this is a delicious, sweet & sour chicken that will make your family happy.

Mango Chicken

Ingredients

  • 3 cups Chicken (diced)
  • 3 tablespoons Corn Starch
  • 1 tablespoon Vegetable Oil
  • 3 cups Mixed Bell Peppers
  • 2 cups Green Onions (Cut into long strips)
  • 3 tablespoons Vegetable Oil
  • 1 1/2 cup Mango Dipping Sauce (see notes for recipe)
  • 2 cups Mangos (cut up)

Directions

Step 1
Combine the cornstarch with the chicken and set aside.
Step 2
Cook Vegetables
In large wok or pan, heat 1 tablespoon of vegetable oil. Add peppers and green onions. Cook for about 3 minutes, or until peppers start to soften. Remove from pan and set aside.
Step 3
Cook Chicken
In the same pan, heat 3 tablespoons of vegetable oil on high. Add chicken and cook, stirring frequently until chicken is brown and fully cooked. This will take about 3-5 minutes.
Step 4
Add vegetables
Add back the vegetables...
Step 5
Add Sauce
And then add the mango dipping sauce. Cook until bubbly.
Step 6
Add mangos
Stir in the mangos, cook for about 30 seconds, and then remove from heat and serve.

Mango Dipping Sauce

Serves 2 1/2 cups
Prep time 3 minutes
Cook time 7 minutes
Total time 10 minutes

Ingredients

  • 1/2 cup Chicken Broth
  • 1 cup Dole's Orange Peach Mango Juice
  • 1/3 cup White Vinegar
  • 1/2 cup Sherry
  • 1/4 cup Sugar
  • 3 tablespoons Cornstarch

Directions

Step 1
Combine all ingredients into sauce pan. Heat on medium heat until it comes to a rolling boil. Reduce heat and cook for 5 minutes. Remove from heat. Serve warm.
