This is the last of my Santa Maria recipes. This spice mixture really does work for everything, and is especially amazing with this Santa Maria Smoked Chicken Recipe.

Santa Maria Smoked Chicken

Ingredients
- 3/4 cups Kosher Salt
- 3/4 cups Sugar
- 4 cups Water
- 3-4 Chicken Breasts
- 2-4 tablespoons Santa Maria Seasonings
Directions
Step 1 | |
Bring salt, sugar and water to a boil. Remove from heat and let cool completely. Brine chicken in water mixture overnight. Pat dry, rub santa maria spices on chicken, and then and smoke at 275 degrees until chicken reaches 160 degrees. Remove from heat, cover and let rest for 10-15 minutes. Slice and serve with or without BBQ sauce. |
Santa Maria Rub

- 2 tablespoons coarse salt
- 2 tablespoons coarse black pepper
- 3/4 teaspoons garlic powder
- 3/4 teaspoons dry mustard
- 3/4 teaspoons cayenne pepper
Directions

Combine and use with your favorite bbq or smoked meat. |
