Move over marshmallows, there’s a new sweet potato in town. These Savory Roasted Sweet Potatoes are now my favorite Thanksgiving side dish. Traditional sweet potatoes are too sweet for me.

Ingredients
- Sweet Potatoes (cleaned, peeled and diced)
- Olive Oil
- Fresh Thyme
- Fresh Rosemary
- Sea Salt
- Red onion (cut into large slices)

Sorry, there are no measurements. Just coat the sweet potatoes and onions in olive oil. Then toss in some fresh thyme leaves and rosemary leaves. Add some sea salt and toss again. Place on a cookie sheet and bake at 475 until lightly browned. It will take about 10-15 minutes. Be careful and watch it, otherwise it might burn. Note: If you are using a non-stick pan, either put the potatoes on non-stick Reynolds aluminum foil or spray the pan with Pam cooking spray. Otherwise, the sweet potatoes may stick. |
Honestly, I don’t know where the tradition to add brown sugar and/or marshmallows to the sweetest root vegetable on the planet. Especially when after that big Thanksgiving meal we have all those yummy sweet pies.
And, no need to wait for next Thanksgiving, try it with roast pork, chicken, or whatever strikes your fancy.
