Snow White Chicken with Chinese Greens Recipe

A beautiful and healthy dinner, this Snow White Chicken with Chinese Greens Recipe can be made easily on your weeknight.  Prepare your Velvet Chicken and have it ready to go in the refrigerator and this dish can be made in less than 20 minutes.

Snow White Chicken with Chinese Greens

Serves 4-6

Ingredients

  • 2 cups Chicken Broth
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Rice Wine Vinegar
  • 1 tablespoon Chinese Cooking Wine (or Cream Sherry)
  • 1/8 teaspoon White Pepper
  • 2 tablespoons Soy Sauce
  • 3 tablespoons Cornstarch
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Vegetable Oil
  • 1 bunch Baby Bok Choy &/or Napa Cabbage (Cleaned and trimmed)
  • 1/4 cup Water
  • 2 cups Velvet Chicken (See notes for recipe)
  • Cooked Rice or Cooked Chow Fun Noodles ((Shown over Chow Fun Noodles))

Directions

Step 1
In a small bowl combine chicken broth, 1 tsp sesame oil, rice wine vinegar, cooking wine, white pepper, soy sauce and corn starch. Set aside.
Step 2
In a large wok or pan, heat on high and add 1 tablespoon sesame oil and 1 tablespoon vegetable oil. Add the Bok Choy, and cook for a minute. Add the water and continue cooking the bok choy for another minute or two or until the bok choy is almost cooked to your liking.
Step 3
Add the velvet chicken and the sauce as prepared in step one. Cook stirring constantly until bubbly. Once it is bubbly, cook for one minute more. Remove from heat and serve over rice or cooked chow fun noodles. (picture is shown over cooked chow fun noodles)

Velveting Chicken for Chinese Stir-Fry

Ingredients

  • 1 Egg White
  • 1 tablespoon Cornstarch
  • 2 teaspoons Chinese Cooking Wine (or Cream Sherry)
  • 1 teaspoon Seasoned Rice WIne Vinegar
  • 1/4 teaspoon Salt
  • 2 Chicken Breast (boneless, thinly sliced)

Note

Velveting chicken can be done in advance and chicken can be refrigerated for use in stir fry recipes later.

Directions

Step 1
Whisk ingredients together
Whisk together egg white, cornstarch, wine, seasoned rice wine vinegar, and salt.
Step 2
Marinade Chicken
Mix in the thinly sliced chicken. Cover with plastic wrap and refrigerate for 1 hour.
Step 3
Boil Water
Wipe off excess liquid. Drop in small batches into boiling water.
Step 4
Remove from water
Boil for about 1-2 minutes, or until chicken is fully cooked. Remove from the water quickly, do not over cook.
Step 5
Velvet Chicken
Use this chicken in your stir fry dishes to create a soft tender white chicken as seen in dishes like Snow White Chicken with Snow Peas.
