A healthy one pot meal that is created from leftovers and can be modified based on what your leftovers you have available. In my case, I made the savory rice, spinach, and the beef tenderloin with gorgonzola sauce. Instead of eating the leftovers as is, I turned the beef with gorgonzola sauce into a pasta dish and used the rice and spinach for this dish.

- 1 tablespoon Olive Oil
- 1 1/2 cup Marinated Pork Cubes
- 3 cups Leftover Savory Rice
- 1 cup Leftover Sauteed Spinach
