A healthy one pot meal that is created from leftovers and can be modified based on what your leftovers you have available. In my case, I made the savory rice, spinach, and the beef tenderloin with gorgonzola sauce. Instead of eating the leftovers as is, I turned the beef with gorgonzola sauce into a pasta dish and used the rice and spinach for this dish.
In large deep skillet, heat olive oil and add pork. Cook until pork is almost done.
Add Spinach and Rice and cook, stirring frequently, for about 7 minutes, or until rice is hot and pork is fully cooked.
