This is by far the best way to use zoodles. So tasty and flavorful. No need for pasta at all. Simple ingredients makes a complex and exciting low carb dinner.
Thai Peanut Zoodles with Shrimp
Ingredients
- 6 zucchini (zoodled)
- 1lb shrimp (deviened, peeled, tail on)
- 1/4 cup light soy sauce
- 1/2 cup sweet chili sauce
- 2/3 cups peanut butter (extra crunchy)
- 1 1/2 colorful sweet peppers (mixed colors, sliced thin)
- 1/2 sweet yellow onion (sliced thin)
- 1 tablespoon olive oil
- 1 tablespoon sesame oil
Directions
Step 1 | |
In a medium bowl, marinade 1 lb of shrimp in 1/4 cup soy sauce, 1/4 cup extra dry vermouth and 1 tbl sesame oil. Set aside. | |

In another medium bowl, make sauce of 1/4 cup soy sauce, 1/2 cup sweet chili sauce, 2/3 cup crunch peanut butter. Stir until combined well. | |

Thinly slice 1.5 colorful sweet peppers and 1/2 sweet yellow onion. | |

Prepare you zucchini noodles by using a vegetable spiralizer. if you don't have one, use a box grater but try to make the strips as long as possible. | |

Add zoodles to boiling water and boil for no more than 30 seconds. Drain and rinse with cold water to stop the cooking process. Leave in strainer to let the zoodles drain as much as possible. | |

In saute pan, heat with 1 tbl olive oil and 1 tbl sesame oil. Drain shrimp and add to hot pan. Cook for a couple minutes until the shrimp is mostly pink, showing that it is almost done cooking. Add 2 tbl sauce and toss. Remove from pan scraping out any sauce. | |
Step 7 | |
Add more olive oil to dirty pan and add vegetables. Cook and stir on high until onions are soft and starting to get caramel in color. Add the zucchini and toss together. Add 1/2 of the remaining sauce and toss. | |
Step 8 | |
Add the shrimp and toss with the vegetables. Serve hot with the sauce on the side. | |
Step 9 | |
Add to angel hair pasta for a pasta dish. You will want to make more sauce if adding to pasta. |
I could go on and on and on about how I made up this dish, but reality is I just threw it together when I couldn’t get the idea out of my head. Super fast to make and was loved by my husband and 16 year old son. No one even asked for pasta. Enjoy!
