Unstuffed Avocado with Tuna
Ingredients
- 2 avocados (diced)
- 1 lime (juice only)
- 2 tablespoons fresh cilantro (chopped)
- 1/4 red bell pepper (diced)
- 1 cup fresh spinach
- 1 can albacore tuna (drained)
- 1 teaspoon jalapeños (finely diced, optional)
Note
Alternatively, you can add the diced red peppers to the mixture, but I kept them separate since I was sharing with someone who didn't like them.

In a large bowl place the scooped avocado pulp, lime juice, salt, cilantro and tuna (and jalapeños if desired). Combine well, but you don't necessarily need to mash all the avocados since leaving some diced adds a pleasant texture. Taste it and then add salt and pepper as needed. Add avocado mixture to a bed of spinach and top with sliced red peppers. Shown with sliced peaches on the side. |
This dish was inspired by a video seen on Facebook of a Tuna Stuffed Avocado. I changed it up a bit for a couple of reasons. The first is that it was unnecessary to take the mixture and put it back into the avocado skin. Maybe presentation was better, but definitely didn’t do anything for the dish.
Secondly, I did not add jalapeños to mine because I didn’t have them, and I didn’t have them because I really don’t like them much.
If you like avocados, and you like tuna, you should love this dish. If you don’t like either, like my hubby, then just move along… this recipe isn’t for you.
