A hearty and full flavored chili that just happens to not have any meat. Perfect for Vegans and meat eaters alike.
Ingredients
- 6 cups Beans (mixed)
- 1 can Diced Tomatoes (14.5 oz)
- 1 can Rotel Diced Tomatoes with Green Chilies (10 oz)
- 1 can Tomato Paste with Roasted Garlic (6 oz)
- 3 tablespoons Garlic (minced)
- 2 tablespoons Chile Con Carne Seasoning
- 1 tablespoon Chili Powder
- 10 cups Water
- 1 Onion (diced)
- 1/2 Bell Pepper (diced)
- 1 Zucchini (diced small)
- 1-2 teaspoon Sugar (to taste - depends on sugar in tomatoes)
- Salt & Pepper (to taste)
Directions
Step 1 | |
Cover beans with water (about 1 inch higher than the beans) and soak for 8 hours (or overnight). | |
Step 2 | |
Bring the beans to a boil and boil for 10 minutes. Drain and rinse beans. | |
Step 3 | |
Add to the crockpot the drained beans and remaining ingredients. Cook on high for 1 hour then reduce to low for 10-12 hours. Taste and add salt, pepper and/or sugar as needed. |
