This Vegan Chili Recipe is hearty and full flavored chili that just happens to not have any meat. Perfect for Vegans and meat eaters alike.
Cover beans with water (about 1 inch higher than the beans) and soak for 8 hours (or overnight).
Bring the beans to a boil and boil for 10 minutes. Drain and rinse beans.
Add to the crockpot the drained beans and remaining ingredients. Cook on high for 1 hour then reduce to low for 10-12 hours. Taste and add salt, pepper and/or sugar as needed.
