Corina’s Colorful Vegetable Medley Recipe

Corina, a close family friend, brought this beautiful vegetable side dish to our Sunday dinner last weekend.  It was beautiful and so delicious. We all raved over it and couldn’t get enough.

Corina’s Colorful Vegetable Medley

Serves 6-8
Prep time 10 minutes
Cook time 15 minutes

Ingredients

  • 2 tablespoons Coconut Oil (Trader Joes brand)
  • 1 Purple Onion (cut up)
  • 2 Mixed Bell Pepper (mixed yellow, red, orange, cut up)
  • 1 cup Spinach
  • 1 Carrot (sliced)
  • 1 1/2 teaspoon Trader Joe's 21 Seasoning Salute
  • 2 tablespoons Garlic (minced)

Directions

Step 1
In a large saute pan with lid, heat the coconut oil and add the cut up onions. Cook until onions are transluscent.
Step 2
Add remaining vegetables, the garlic and trader joes seasoning. Cook for a few minutes, reduce heat, cover and cook for about 10 minutes.

Thank you Corina for this Colorful Vegetable Medley Recipe.  We are blessed to have such a wonderful friend and, really, family member to join with us for dinner on Sundays. And if you keep bringing vegetables like this, you’ll never be able to get rid of our crazy family.

I think what made this different was the coconut oil and the trader joes seasonings, both of which I think I need to go out and buy. So, take a trip to Trader Joes and Enjoy!
