Gluten Free Double Chocolate Brownies Recipe

Gluten Free Double Chocolate Brownies

Ingredients

  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup oat flour
  • 1/2 cup chia seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2/3 cups salted butter
  • 2 tablespoons water
  • 1/2 cup coconut sugar
  • 1/4 cup Monk Fruit granulated sugar substitute
  • 2 cups semi-sweet chocolate chips (sugar free if you prefer)
  • 2 teaspoons vanilla extract
  • 2 eggs

Directions

Step 1
Preheat oven to 350 degrees F. Spray an 8x8 baking pan with an oil of your choice.
Step 2
In a small bowl, combine the flours, chia seeds, salt and baking soda. Set aside.
Step 3
In a medium size saucepan, add water, butter, and sugars. Heat on medium heat, stirring constantly, until butter is melted and mixture starts to come to a boil. Turn off and remove from heat.
Step 4
Stir in 1 cup of chocolate chips and mix until fully melted. Add vanilla and mix. Stir in one egg at a time and mix well. Add the flour mixture and stir well. Add in the remaining chocolate chips and combine. Pour into the oiled 8x8 pan.
Step 5
Place in the middle of the oven and bake for 30 minutes. Remove from oven and let cool at least 20 minutes before cutting into.

These brownies were so moist and delicious. Super chocolatey, sweet and just perfect for that stuck inside blues.

As I’ve stated earlier, my plan is to always deliver you the recipe first. Well, here we are with a Shelter In Place continuing for one more month, so it’s time for a little pick me up.

Instead of using the flour mixtures as stated, I decided to just use 1/2 cup of my leftover almond/coconut pulp leftover from making Almond/Coconut milk in my Almond Cow mixed with 1/2 cup of Oat flour. Turned out amazing. But I still have 2-3 cups of that pulp left. I need to find more creative ways to use it up.

Well, I hope you enjoy! Oh and if you don’t have all those flours, just use whatever flour mixture you have equaling 3/4 cup. As for my choice in sugars, you can also just use granulated sugar, but I’m trying hard to stay away from that (shhhh, i know the chocolate chips have sugar, don’t burst my bubble!). Enjoy!!!
