Korean Crystal Noodles Recipe

Korean Crystal Noodles

Ingredients

  • 1 Package Korean Style Sweet Potato Starch Noodles
  • 1 Large Bunch Taiwanese Spinach (cleaned & trimmed)
  • 1/2 bunch Green Onions (1)
  • 1/4 cup Light Soy Sauce
  • 1 teaspoon Seasoned Rice Wine Vinegar
  • 3 tablespoons Vegetable Oil
  • Sesame Seeds (optional)

Directions

Step 1
Soak noodles in warm water for about 1 hour. Drain.
Step 2
In a large pan or wok, heat with 3 tablespoons of oil. Add the spinach and green onions, tossing and cooking until the vegetables are wilted. Add the soy sauce mixture and cook for a couple of seconds while tossing. Add the noodles, and using tongs, pull the noodles and vegetables from the bottom to mix and cook. Continue to do this while cooking until all the liquid is gone. Remove from pan and sprinkle sesame seeds (optional).

One of my favorite dishes at Korean restaurants. Probably because most Korean food is either super spicy or super sweet. This dish balances it all out.

I love trying to recreate restaurant dishes, sometimes with dramatic failure and sometimes with complete success. I’d call this one a complete success. It was so simple to create and tasted so good. I think you will love it.
