Combine sugar, salt and hot water together. Mix until sugar and salt have melted into the water. Add the ice water, stir well. Brine will be ready to use as soon as it reaches room temperature. This should take but a minute or so while the ice melts. Perfect for chicken breasts. Tripple the recipe to brine a whole chicken. Multiply the recipe by 4-8 to brine a whole turkey (depending on size).
You can add seasonings to your brine to enhance the flavors.
