This chicken is so moist and tasty, you will want to make a huge batch because just one batch won't be enough.
Ingredients
- 3 cups Water
- 1/4 cup Salt
- 1/4 cup Brown Sugar (firmly packed)
- 1/4 cup Chicken Rub (Dish Ditty's)
- 2 cups Ice Cubes
- 4 Chicken Breasts (boneless (skinless optional))
Directions
Step 1 | |
Heat water, salt, sugar, and chicken rub until sugar and salt is completely dissolved. It may not need to boil. Remove from heat and add ice. Cool this mixture (brine) until it is at least 45 degrees or lower. | |

Once the brine is cooled, place the chicken and brine in a zip lock bag. Seal and refrigerate for 4-6 hours. Remove from the brine, discard brine, and pat the chicken dry with paper towels. | |
Step 3 | |
Smoke at 275 for 1.5 to 2 hours, or until the temperature reaches 165 degrees. The time depends on the thickness of the breasts. If you have think breasts, it may be an hour or less. | |
Step 4 | |
Remove from the smoker and let rest for 10 minutes before slicing. |

This recipe turned out great! We made chicken sandwiches for our weekday lunches and they were amazing. So tender and flavorful!
