In my quest for a good El Pollo Loco Chicken Copy Cat Recipe, I came up with this really good Turmeric BBQ Chicken Recipe. It isn’t quite El Pollo Loco, but it was delicious!
Turmeric BBQ Chicken
Ingredients
- 1 1/2 cup Pineapple Juice
- 1/2 cup Lime Juice
- 2 tablespoons White Vinegar
- 2 tablespoons Olive Oil
- 4 tablespoons Minced Garlic
- 2 teaspoons Salt
- 2 teaspoons Ground Black Pepper
- 1/2 Jalapeño (seeded & cubed)
- 2 teaspoons Turmeric
- 3lb Chicken Pieces (with bone and skin)

Place all ingredients except chicken in a ziplock bag. Mix well. Add the chicken and be sure to fully coat all the pieces. Zip it up and refrigerate for at least 24 hours. Can marinade for up to 3 days (depending on the freshness of your chicken). Remove from marinade and grill or smoke until chicken is fully cooked and reaches 165 degrees. I used a Traeger Pellet Smoker with Oak Pellets at 225 degrees for 2 hours. |
I think the El Pollo Loco Chicken may use turmeric to make the chicken yellow, but maybe not as much as I used here. The flavors came out more Indian than Mexican, but to me, that’s not a bad thing.
