
Savory, not sweet, is what makes this macaroni salad stand out. Most grocery store macaroni salads are so sweet you might as well have them for dessert. I’ll have to double check with my Dad, but I think my Mom got this recipe from my Dad’s mother when they got married. One things for sure, this became my Mom’s signature macaroni salad, one that has ruined it for me for any other macaroni salad out there, especially grocery store ones. Sweet macaroni? yuk! 🙂 Well, no offense if you like sweet macaroni salad, but try this salad and you’ll be pleasantly surprised.

Ingredients
- 1 cup Celery (diced)
- 1 cup Yellow Onion (diced)
- 1 cup Green Bell Pepper (diced)
- 1.5 cups Mayonnaise
- 1 tablespoon White Vinegar
- .5 teaspoon Salt (or more to taste)
- 1 teaspoon Pepper (or more to taste)
- 1lb Macaroni (cooked and rinsed in cold water)
Directions

Cook macaroni noodles according to direction. Drain and rinse with cold water. Set aside. | |
Step 2 | |
In large bowl, mix together everything except the macaroni. Once everything is well combined, mix in the macaroni. Cover and refrigerate for at least 1 hour. Can be made a day or two in advance. |
