I’ve been experimenting with my Santa Maria spice rub and learning what works and what doesn’t (so far I haven’t found anything that doesn’t work). This recipe was modeled after the Santa Maria Tri Tip Recipe and turned out just as delicious.
And do what I do and make a big batch of the spice mixture so all you have to do is sprinkle and smoke.

Santa Maria Smoked Pork Chops
Ingredients
- 4 Pork Chops (bone-in)
- 1 teaspoon Coarse Sea Salt
- 1 teaspoon Coarse Black Pepper
- 1/2 teaspoon Dry Mustard
- 1/2 teaspoon Cayenne Pepper
- 1/2 teaspoon Ground Cumin
Directions
Step 1 | |
Mix spices together and then generously sprinkle mixed spices over pork chops. Cover and refrigerate overnight. | |
Step 2 | |
Smoke for 2 hours at 225 degrees. | |
Step 3 | |
Remove from smoker and wrap with tin foil. Place in a 180 degree warm oven for 30-60 minutes. Remove from oven and serve. |
