Instant Pot Sirloin Tip Shredded Beef Recipe

The Instant Pot is perfect for shredded beef. And shredded beef is perfect for sandwiches, burritos, quesadillas, salads, and well, everything!

Instant Pot Sirloin Tip Shredded Beef

Ingredients

  • 3-5lb sirloin tip roast
  • 2 to 4 tablespoons Montreal Steak Seasoning
  • 2 to 4 tablespoons vegetable oil
  • 3 cups yellow onion (diced)
  • 1 cup red bell pepper (diced)
  • 1 cup green bell pepper (diced)
  • 1 tablespoon Carne Asada Seasoning
  • 1 cup red wine
  • 1/2 cup soy sauce
  • 1 cup water
  • 1 can Del Monte diced tomatoes and chiles (14 oz)
  • 1/2 can chipotle peppers with sauce

Note

To use the extra liquid in beans, first soak the beans for 8+ hours. Drain the beans. Add enough of the liquid to cover and about 1" above the beans. Set Instant pot to "Beans" and let it go, using natural release. OMG so good. I used small red beans. Would work well with pinto beans as well.

Directions

Step 1
Cut the sirloin tip roast into large chunks that fit into the instant pot. Sprinkle with Montreal Steak Seasoning.
Step 2
Set Instant Pot to saute. Add 2 Tbl of the oil and let it get hot. Brown the chunks of seasoned meat in chunks, removing to a plate when browned, adding more oil as needed.
Step 3
Once all meat are browned and remove, add:
3 cups diced onions
1 cup diced red bell pepper
1 cup diced green bell pepper
sprinkle of carne asada seasoning on vegetables

Cook for 1-2 minutes, stirring the brown bits from the bottom (not all will come up that's ok)
Step 4
Add 1 cup of red wine and deglaze the pan, and continue cooking while scraping up the brown bits.
Step 5
Add:
1/2 cup soy sauce
1 cup water
1 14oz can del monte diced tomatoes and green chiles
1/2 can of chipotle peppers with sauce

Stir well.
Step 6
Add back meat and push down to try to cover as much of the meat as possible

Set to high pressure 45 minutes

Natural release...
Step 7
Remove the beef from the liquid, remove the fat off the beef and shred using two forks. Add just enough liquid to the beef to keep it moist. Use the excess liquid as a base for soup or beans! (see notes)

I’ve been having fun with my Instant Pot, but I haven’t yet drank the Instant Pot Koolaid. I don’t do everything in it, but there are some things it does really really well. One thing it does really well is tenderizing meat. This would take 3-4 hours in the oven or stove top, and may not come out as tender.
