This is a beautiful appetizer or side dish that can be prepared in advance. The prosciutto and asparagus pair well together and make a wonderful dish.
Bring a large pot of water to boil. Add the asparagus and cook for 45 seconds. The water may not yet come to a boil, that's ok. Remove from the water and immediately add the juice from the lemon and fresh ground salt/pepper. Let the asparagus cool.
For each prosciutto, you can wrap about 3-4 asparagus spears (depending on the size of the asparagus and the prosciutto). Wrap enough prosciutto on each asparagus. Serve room temperature, or refrigerate and serve chilled.
If you want to make it less work, you can put 2-3 asparagus spears together.
