Pulled Pork Quesadilla Recipe

This Pulled Pork Quesadilla is my son’s favorite way to use leftover Pulled Pork. It’s so easy, I’ll make it for him for breakfast, lunch, dinner or even just as an afternoon snack.

Pulled Pork Quesadilla

One of many uses for leftover pulled pork, these Quesadillas are great for breakfast, lunch, dinner, or even as an appetizer at your next party.

Ingredients

  • 1 Flour Tortilla (Guererro is my favorite brand)
  • 1/4-1/2 cup Mexican Shredded Cheese
  • 1/4 cup Pulled Pork
  • Pam Cooking Spray or Butter

Directions

Step 1
Quesadilla
Spray a large non-stick skillet with Pam (or use butter, but pictured using Pam). First quickly heat up your pork in the pan so that it is hot when you add it to the quesadilla. Remove from the pan. Spray again with Pam and add the tortilla. Place the cheese over the entire tortilla and add the pork to half of the tortilla (as pictured). Cook until the cheese starts to melt. Fold over and cook, flipping as needed, until both sides of the tortilla are crispy and light brown. Serve with salsa, sour cream and avocados.
