Smoked Asparagus Medley Recipe

Summertime means lots of fresh colorful vegetables like the ones found in this Smoked Asparagus Medley Recipe.

This is one of my favorite ways to cook vegetables. No fuss no muss. Simple to prepare, the peppers, onions, mushrooms and asparagus blend so well together you will make extra just so you can have leftovers.


Smoked Asparagus Medley

  • 3 bunches Asparagus (cleaned and cut up)
  • 1/4 Large Yellow Onion (diced)
  • 1 Large Red Pepper (diced)
  • 6-8 White Mushrooms (cleaned and sliced thick)
  • 6-8 Fresh Basil Leaves (chopped)
  • 2-4 tablespoons Garlic Olive Oil
  • 1/2-1 teaspoon Garlic Salt with Parsley


Step 1
Preheat grill or smoker and bring to the highest temperature for a pellet smoker (about 400 degrees) or to about a medium high on a grill.
Step 2
Combine all ingredients
Combine all ingredients.
Step 3
Place in a grill basket.
Place in a grill basket and put in smoker. Smoke at 400 degrees for 30-40 minutes.
Step 4
Garlic Salt with Parsley
This is the Garlic Salt with Parsley. If you don't have this, just use regular garlic salt.
